Tallow: Know Your Source
This past week I flew to Indiana to walk our tallow processor's operation.
Tallow skincare has exploded, and that is mostly good news. More people are taking simple, fat-based skincare seriously. The catch is that it got harder to know whether the jar in your cart matches the story on the label.
I wanted to share what I saw. For us, "know your source" is critical to our operation and not just a slogan.
Why it's harder to know what you're buying
Online you will hear two extremes. One says every tallow brand is the same. The other says every other brand is lying. Neither helps you buy.
What is fair: the category grew fast, and fast categories attract shortcuts. Some jars start from carefully sourced fat and careful purification. Some start from commodity fat that has been refined, bleached, and deodorized (RBD) into something white and nearly odorless. RBD can use bleaching earths or clays, refining steps, and high-heat vacuum deodorization. That path is common when the goal is a neutral, uniform industrial fat. It is not how we want our balm fat to get clean.
You will also see "grass-fed," "grass-finished," or "made in the USA" language when the chain behind the jar is fuzzier than the marketing. Plenty of reputable brands still do this well. The buyer still has to ask better questions.
At Tallowbourn we try to earn that trust the slow way: clear sourcing, real facility standards, and a price that stays approachable for regular use.
What "know your source" means for us
For the fat itself, we use Grass-Fed & Finished suet tallow from U.S. farms. Suet is the hard fat around the kidneys and loin cavity. It is a firmer, cleaner starting fat than generic trim. It's the main ingredient in all of our products.
Our supplier purifies that fat at a USDA FSIS-inspected U.S. facility. That is the right language for a meat-fat processor. Our finished skincare is made at FDA-registered cosmetic manufacturers here in the U.S. Those are two different kinds of oversight. We do not blur them.
We also do not run a chemical refining stack to force the fat white and odorless. Controlled temperatures, filtration, and centrifugal separators do the work. The result is a light golden tallow, not a bleached product.

Where does tallow come from?
Here is the short version from standing on the plant floor in Indiana.
What I saw in Indiana
Our processor has been in this business since ca. 1975. It is still family owned. The COO has been there more than thirty years, with two brothers whose dad was the former COO (now retired) helping run all sales and operations. You do not see that structure as often as you used to. I was impressed before I walked the floor. After I walked it, "impressed" felt small.
I wish I could show you photos or video. They do not allow that, for understandable reasons. So words will have to do.
Grass-fed suet arrives daily in refrigerated tractor-trailers, in giant lined containers (think roughly six feet on a side). It moves into refrigerated storage, then into large augers to begin purification. Through the line there is both human QC and automated QC. The job is simple to say and hard to do well: separate protein and residual tissue from the fat, and pull impurities out, without turning the fat into a pure, chemical-free commodity.
That happens with precise temperature control, water-assisted steps and filtration where needed, and centrifugation on industrial separators. The separators spin denser protein and residual solids away from the fat. Temperature windows matter so the fat flows and separates cleanly without cooking it into something harsh. No bleach. No deodorizer stack. At the end you get a beautiful light golden tallow, filled straight into containers for distribution.
In their operation, farm to finished bucket can happen in under a week. That cadence is part of why the fat smells and looks like carefully handled suet tallow, not like a warehouse afterthought.
A lot of commodity fat logistics look different. Bulk animal fat often moves in tank cars built for liquids and semi-solids, not in the refrigerated trailer cold chain you use for fresh fat. Those cars may need heating later so the fat will pump out. Different product, different path, different priorities.
Food tallow vs the fat in our jars
One detail that stuck with me: the same kind of operation can make food tallow you would recognize under other labels at big-box clubs, and a cleaner cosmetic-grade stream for skincare.
Cooking tallow often keeps more of the beef aroma and flavor on purpose. That is a feature you want. For face and body balm, we want the fat purified further so it is mild, white/light yellow, and easy to use daily. Same animal fat family. Different endpoints. Different process choices.
What to ask any tallow brand
If you are comparing jars, these questions beat vibes:
- What fat are they starting from (suet vs mixed trim)?
- Is it grass-fed and finished, and can they say that without hedging?
- Where is the fat purified, and is that facility USDA FSIS-inspected for meat fat?
- Are they using physical purification (temperature, filtration, centrifugation) or an RBD-style chemical refining path to force white and odorless?
- Where are the finished products made, and is that cosmetic manufacturing FDA-registered?
- Can they talk about the process in plain English without hiding behind "proprietary"?
You will not get a factory tour from every brand. You should still get clear answers.
Why I am telling you this
We care about the jar because we use the jar. Transparency is how a chemist-founder sleeps at night when the category gets noisy.
I flew to Indiana to see the line with my own eyes. I left more confident in the fat we buy, and more sure that "know your source" is the right bar for anyone selling tallow skincare at scale.
